Two days ago, I launched my first non-profitable project in this blog, which is called  LEFT,OVER. and you can read more about it by clicking on the underlined name.


I appreciate all the supports from my lovely friends. Because of your support, the project has been undertaking and will be slowly presented to you in my blogs and my other social media links. All my supporters and participates are the savers for mother earth and I sincerely want to thank everyone who has been participating or will join this program and contribute some efforts to it. As  a fresh graduate, I have no big financial investors in this project. Therefore, the only thing I can offer to my dearly friends are my recipes. Some of them are from my grandma’s traditional recipes (Sichuan food.), and some of them are from my personal creation.

A lot of my friends ask me how do I keep fit but eating so much. Honestly, I do have my own secrets to control my weight and eat healthy. LEFT,OVER . project is  also aiming at helping you  have better control of  what you eat and how much you eat. My recipes are easy to cook and various. In each recipe, I will provide personal advice how to eat it, when to eat it, and other relevant helpful information.

So today, I will present Fried rice with courgette and eggs which is my own creation. This is a quite heavy meal which gives you a lot of energy, so try to avoid eating too  much at dinner. But for lunch, it is pretty good because it will give you enough energy and last until the end of the day.  This dish doesn’t contain a lot of oil, so it is relevantly a light meal. And it is also vegetarian meal. So all my vegetarian friends will have a lovely new choice!

Preparation: It is very simple.

  • A bowl of rice (depends on how many people you are cooking for, the following amount is for two people. )
  • One courgette (Normal size one. If it is a big one, just half will be enough.)
  • Two medium size eggs (Whisk the eggs with some salt)
  • A clove of garlic
  • A small onion
  • A cup of boiled water
  • Some lemon skin
  • 25ml olive oil (I don’t like to cook with too much oil in this meal, but it can little more if you prefer greasy food.)
  • Some salt
  • Some black pepper
  • some Chilli powder if you would like to have spicy taste in it.R1-STEP 1.png

Now it is time to cook!

First, heat up the pan and add 15ml olive oil in the pan. When the pan is pretty hot(you can feel it by putting your hand on top of the pain. BE CAREFUL!), add the whisked eggs and you should see the eggs raises up very quickly. Break it down to small pieces and put into the bowl. Keep it aside for later on. (Don’t make the scrambled eggs, because it is a completely different thing. The one I am talking about here is really spongy.)


Then you add 10 ml olive oil and  add chopped garlic and onions. Cook for a while until you start to smell the nice smell. Then add some lemon skins. (Use cheese grater here) After that, add your courgette, some salt, some pepper, some chilli (optional), and half cup of the boiled water.

Until the courgette turns into darker color and becomes soft, add the pre-cooked eggs and the rest of the water. Add some salt here if you think it is not salty enough for you. (TASTE IT BEFORE YOU ADD ANYTHING! – useful tip!)


Now, until the water is almost boiled off and the sauce starts to become creamier, add the rice. (warmed one or fresh cooked one) Use low heat to cook. So you can mix the rice with the dish properly without burning it. If it is too dry, you can add some olive oil to ease it up and it will taste better.
